Peaches & Cream French Toast
Peach Butter: (syrup)
1 - stick of butter, soft
1/3 C - peach preserves ( I used my homemade peach jam)
1 tsp. - almond extract
Mix soft butter, peach jam and almond extract in bowl, cover and refrigerate.
12 - large eggs
¾ C - peach preserve
2 tsp - almond extract
3 C - half and half or whole milk
French bread – sliced 1 inch to 1-1/4 inch thick
Slice day old French bread 1 inch to 1-1/4 inch thick. Beat eggs, half and half, almond extract and peach preserve in large mixing bowl. Soak French bread in egg batter. Place in covered container and refrigerate overnight. Heat griddle to medium high setting. Cook prepared French toast 8 minutes on each side. Cooked French toast will have a custard consistency. Serve with peach butter, garnish with fresh peaches, confectioner sugar and slivered almonds. Serves 8 – 10. Enjoy!
